Egg White Omelet

This is a delicious high-protein breakfast recipe for one, double the recipe for two.

INGREDIENTS

  • 5 eggs
  • 2 tbsp avocado
  • 6 oz red bell peppers
  • 6 oz green bell peppers
  • 3 oz white onions

DIRECTIONS

  • Chop peppers and avocado and set to side.
  • Pour egg whites into frying pan on medium heat.
  • Once egg whites start to cook, add red bell peppers, green bell peppers, white onions and avocado. Add kale, if desired.
  • Fold egg whites over vegetables; flip. Continue cooking until egg whites are fully cooked.
