Egg White Omelet

This is a delicious high-protein breakfast recipe for one, double the recipe for two.

INGREDIENTS
- 5 eggs
- 2 tbsp avocado
- 6 oz red bell peppers
- 6 oz green bell peppers
- 3 oz white onions
DIRECTIONS
- Chop peppers and avocado and set to side.
- Pour egg whites into frying pan on medium heat.
- Once egg whites start to cook, add red bell peppers, green bell peppers, white onions and avocado. Add kale, if desired.
- Fold egg whites over vegetables; flip. Continue cooking until egg whites are fully cooked.
